Ingredients

You can find all the ingredients for this spam fried rice recipe at your local grocery store. Full measurements and links to all the ingredients I used are listed in the recipe card below

All the ingredients for spam fried rice organized and labeled,
  • Eggs: add additional protein.
  • Spam: diced into bite sized pieces.
  • Garlic: is the main aromatic.
  • Green Onion: adds another layer of aromatic flavor.
  • Frozen peas, carrots, corn: are the easiest way to add vegetables with minimal prep.
  • Day-Old White Rice: Be sure to use rice that has been cooked in a rice cooker or on the stove for at least 24 hours and stored in the refrigerator. The refrigerator dries out the rice, allowing it to absorb the sauce without becoming too clumpy and mushy. You will typically use day-old rice in any fried rice recipe, such as Chinese chicken fried rice or beef fried rice.
  • Soy Sauce: adds a salty umami flavor to the fried rice.
  • Fish Sauce: adds a funky umami flavor that is irresistible.
  • Chicken Bouillon Powder: adds a savory flavor note.
  • White Pepper: adds a bright earthy, mild pepper flavor.
  • Sesame Oil: adds a nutty umami finish to the spam fried rice.

Expert Tips

  • Use day-old rice. To prevent your spam fried rice from becoming mushy, use day-old rice that is cold and slightly drier for the best texture.
  • Have all the ingredients prepped. When you begin the cooking process, it is fast, so have all of your ingredients measured, prepped, and ready to go for a successful cook.
  • Use a wok. Using a wok is ideal because its high walls conduct heat evenly, preventing the rice from falling out when you toss everything together.
  • Use a hot wok. Before you begin cooking the spam, ensure your wok or skillet is hot to add a nice sear to your spam and prevent your rice from becoming mushy.

FAQ

Can I use fresh rice for fried rice?

Day-old rice is recommended to avoid mushy rice. However, you can make this recipe without day-old rice by using less water when cooking the rice, spreading the cooked rice out on a baking sheet, and storing it in the freezer for at least 1 hour to dry out and cool slightly.

Can I use other meat besides spam?

Yes! You can use other meat such as diced ham, chicken, shrimp, beef, pork, or tofu for a vegetarian spam fried rice.

How do I prevent fried rice from sticking?

To prevent your rice from sticking, use day-old rice, cook it in a hot wok or skillet, and use enough oil to prevent the rice from sticking and clumping together.

This is delicious, I made it with out the spam next time, I will use shrimp or chicken. I have made this several times, discovered the short on Pinterest. However I wanted exact measurements so I looked up the recipe here and in the directions it mentions sugar! in with the wet ingredients! but sugar is not listed in the ingredients, shown in the pictures or mentioned on the short, is sugar suppose to be added to the soy sauce, fish oil mixture? Either way, I’ll make this forever it’s THAT good!
