Thai Red Curry Paste: I highly recommend using Arroy-D or Mae Ploy Thai red curry paste for the richest, most authentic flavors. I used Mae Ploy in both this recipe and my Thai red curry with chicken.
Garlic and Ginger: for fresh added aromatics.
Soy Sauce: adds a salty, savory balance.
Fish Sauce: adds a funky, salty, umami flavor.
Brown Sugar: to gently balance out the spicy flavors.
Sesame Oil: for a nutty umami finish.
Bok Choy: be sure to wash thoroughly before adding to the dish.
Frozen Dumplings: use your favorite frozen dumplings! I used Trader Joe’s frozen dumplings.

How to Make Dumpling Bake
Here are the step-by-step instructions for how to make this dumpling bake recipe.
In a 9×9 baking dish, mix the coconut milk, red curry paste, garlic, ginger, soy sauce, fish sauce, sugar, and sesame oil.
Next spread the chopped bok choy across the baking dish.
Then add the frozen dumplings in a single layer, and spoon the sauce over them.
Cover with foil and bake for 20 minutes. Then remove the foil and bake for an additional 10 minutes until the dumplings are tender.

Use frozen dumplings. Do not thaw the dumplings! You can bake them frozen. This will allow them to retain their shape and avoid becoming overly mushy.

Storage Instructions

You can use any frozen dumplings made from pork, chicken, or vegetables. And from any cuisine, such as Korean mandu, Japanese gyoza, or Chinese pork-and-chive dumplings. If they are raw, increase the bake time by 5-10 minutes until they are cooked through.

Yes! You can layer in spinach, mushrooms, bell peppers, baby corn, Thai basil, etc.

Prepare the oven. Preheat the oven to 375°F (190°C) and place the rack in the center position.
Make the red curry broth. In a 9×9 baking dish, add coconut milk, red curry paste, garlic, ginger, soy sauce, fish sauce, sugar, and sesame oil. Whisk until everything is combined.
Add bok choy. Next, spread the bok choy evenly across the baking dish.
Add the dumplings. Then add the frozen dumplings to the baking dish in a single layer. Then spoon some sauce over the dumplings.
Bake. Cover the dish with foil and bake for 20 minutes. Then remove the foil and bake for an additional 5-10 minutes until the dumplings are tender.

I have made this 3 times in the last 2 weeks. However. I can never just make a recipe. I whisked the sauce over the stove and added the bokchoy, cilantro, dumplings, and added shrimp to the pan and cooked w a lid till done. So good served over rice.

Added spinach and broccoli and on another occasion used tilapia filers instead of dumplings. Served over rice. Was delish!!!
Hi, can I substitute the ginger with something else?? Since I can’t have ginger it goes against some of my meds.. I do love the taste in food but unfortunately I can’t have it.
I’ve been dying to make this for some time, and today was finally the day! The flavors were incredible—we followed the recipe exactly. After a few bites, we added 2–3 tablespoons of crunchy peanut butter to the sauce and wow… it took it to the next level!
Very good. I used fresh spinach as bok choy in store looked bad and it was excellent. One suggestion: as the full fat coconut milk always separates in the can, almost like cream cheese consistency, it’s much easier to put all broth ingredients in a bowl and whisk vigorously, then pour into your pan. True, one more bowl to wash but a whole lot easier to mix.

This recipe is amazing, it has complex savory flavors. I served it over saffron Basmati rice , I know two starches, but it complimented this perfectly in my opinion. I helped soak up the delicious sauce. The only tweak I made was I used only one Tablespoon of red curry sauce as I didn’t know how spicy it would be. Next time a touch more.

Absolutely. I would cut down the baking time or throw the dumplings in after if they are freshly cooked seperately.
