Com Chien (Vietnamese Fried Rice)

Easy and delicious Vietnamese fried rice in under 20 minutes! This incredibly flavorful com chien recipe is made with Chinese sausages, char siu pork, and vegetables for a quick weeknight meal.

Ingredients

  • 2 large eggs whisked
  • 3 Chinese sausages diced into 1/4 inch pieces
  • 4 oz Char siu pork diced into 1/4 inch pieces
  • 1 ½ cup frozen peas, corn, green beans and carrots
  • ½ cup shallots minced about 2-3
  • 5 cloves garlic minced
  • 4 cups cooked white rice refrigerated, day-old

  • Green onion sliced

Instructions

  • Scramble the eggs. Heat one tablespoon of oil in a wok or large pan over medium heat until hot. Add in the whisked eggs, let the bottom layer slightly set, and then scramble for 1-2 minutes. Remove from heat and set aside.
  • Cook the pork, sausage, and vegetables. Heat a wok on medium-high heat. Add Chinese sausage and cook for 1 minute. Then add char siu and saute for 1 minute. Then add the frozen vegetables and mix until combined for 1 minute. Remove from heat and set aside.
  • Sauté shallots and garlic. Heat 3 tablespoons of oil over medium heat. Add shallots and garlic and saute until browned, fragrant, and caramelized, about 5 minutes.
  • Mix in the rice and seasonings. Then add the rice, soy sauce, fish sauce, chicken bouillon powder, and white pepper and toss to combine, about 1 minute.
  • Combine. Lastly, add the eggs, Chinese sausage, char siu pork, and vegetables, and toss until combined, about 2 minutes.
  • Serve. Garnish the com chien with green onion and serve immediately.
