Caramelized Spam and Eggs Recipe

Ingredients

  • 2 cups cooked white rice
  • Furikake

Instructions

  • Make the glazing sauce. In a small mixing bowl, mix the soy sauce and water until combined. Set aside
  • Prepare the eggs. In a mixing bowl, whisk the eggs with salt and white pepper.
  • Scramble the eggs. Heat 1 tablespoon of oil in a medium pan over medium heat. Pour in the whisked eggs and use a rubber spatula to slowly and gently stir and fold the eggs into themselves until the eggs just come together. Stop stirring when the bottom of the eggs is just set and the top is wobbly and glossy. Remove and set aside.
  • Cook the Spam. Heat the same pan on medium heat until hot, then add the spam and sear each side until browned and crispy, about 1-2 minutes on each side.
  • Season the spam. Then sprinkle the sugar over the spam and toss to evenly coat. Add the soy sauce mixture and toss the spam to coat evenly. Simmer for about 3-4 minutes, stirring periodically or until the soy sauce thickens and glazes the spam.
  • Serve. Serve the spam and eggs over white rice. Top with the fried garlic, furikake, sesame seeds, and green onion.
