Strawberry Green Tea

Ingredients

Green Tea

  • 2 green tea bags or 1 tablespoon loose leaf green tea
  • 2 cup hot water 175°F (79°C)

Strawberry Puree

  • 2 cups strawberries washed and hulled
  • 3 tablespoon granulated sugar more to taste
  • ½ tablespoon lemon juice (optional)

Instructions

  • Brew the Jasmine green tea. Steep the Jasmine green tea in the hot 175°F (79°C) water for 3 minutes. After 3 minutes, chill in the refrigerator for 30 minutes or until cooled.
  • Blend strawberries. In a blender or food processor, blend the strawberries until smooth. Then pour through a fine mesh sieve into a medium saucepan to catch all the seeds.
  • Sweeten and reduce. Add the sugar and lemon juice into the strawberry saucepan mix until the sugar has dissolved and bring to a boil over medium-high heat. Once it reaches a boil, lower the heat to medium heat and simmer for 7-8 minutes stirring occasionally until reduced by half and slightly thickened. It will foam up at first but will settle over time. Once you turn off the heat, skim the remaining foam off the top. Remove from heat and set aside in the refrigerator to cool.
  • Serve. Pour the chilled jasmine green tea and strawberry puree in a glass stir together until combined. Add ice and any preferred toppings and enjoy!

Notes

  • Use high-quality tea. Since this is the base of this strawberry tea recipe, I recommend using high-quality green tea.
  • Measure the temperature of the water. If you steep the green tea in water that is too hot, you risk burning the tea leaves resulting in bitter tea. If you steep the tea in water that is too lukewarm, the flavors of the tea may not release enough resulting in a less flavorful tea.
  • Steep the tea for another minute for stronger tea. If you prefer your green tea to be stronger, I recommend steeping the tea for an additional minute. Do not steep your green tea for too long! It may result in an unpleasantly bitter taste.
  • Sift the blended strawberries. If you prefer your strawberry green tea to not have bits of strawberry seeds, sift the blended strawberries for a smooth finish.
  • Reduce by half until slightly thickened. Reducing the strawberries in a saucepan will intensify the natural strawberry flavors creating a stronger strawberry tea.
  • Skim the foam. Remove the strawberry reduction from the heat before skimming the foam for a uniform red color.
  • Storage Instructions. You can store any leftovers by, transferring the strawberry green tea to an airtight container like a glass jar or sealed pitcher in the refrigerator for up to 5 days.
