Spicy Asian Cucumber Salad

Light and refreshing, this spicy Asian cucumber salad is packed with so much flavor. This easy 15-minute cucumber recipe features crisp cucumbers dressed in a soy sauce, rice vinegar, and chili oil sauce.

Ingredients

  • 6 Persian cucumbers
  • 1 tablespoon salt

Dressing

Instructions

  • Cut the cucumbers. Slice the ends of the cucumber. Then, place the cucumber between two chopsticks and make thin diagonal cuts at a 45-degree angle. Then, flip the cucumber and slice it into thin, straight cuts. Be sure to avoid slicing the cucumber all the way through.
  • Salt the cucumbers. Place the cucumbers in a bowl, sprinkle the salt, and mix to combine. Let the cucumbers soak for 5 minutes, then rinse them thoroughly with water to remove the salt. Then pat to dry.
  • Make dressing. In a small bowl, add soy sauce, rice vinegar, honey, chili oil, garlic, sesame oil, sesame seeds, and diced green onion. Mix until combined.
  • Combine. Pour the dressing over the cucumbers and gently toss to combine. Serve immediately and enjoy!
