Ingredients

Noodle Stir-Fry

  • 10 oz fresh egg noodles
  • 5 cloves garlic minced
  • 1 ½ cup bean sprouts
  • 3 stalks green onions cut into 2 inch pieces whites and greens separated
  • 1 teaspoon sesame oil to finish

Sauce

Instructions

  • Prepare the noodles. Prepare the noodles according to the package instructions. If using fresh noodles, blanch the noodles for about 1 minute in boiling water. Rinse in cold water and drain. Set aside.
  • Mix the sauce. In a small mixing bowl, add the soy sauce, dark soy sauce, sugar, white pepper, and water. Mix until the sugar has dissolved and set aside.
  • Saute aromatics. In a wok over medium heat, add a tablespoon of oil. When the wok is hot, add the minced garlic, and the white part of the green onion. Cook until fragrant about 2 minutes.
  • Add the noodles and sauce. Then add the noodles and toss to combine. Spread the noodles onto a thin even layer and cook until crisp about 3 minutes. Then lower the heat to medium-low add the sauce and toss to combine until the noodles are caramelized.
  • Add bean sprouts and green onions. Then add the bean sprouts and green onions and cook for 3-4 minutes or until softened.
  • Serve. Remove from heat, mix in the sesame oil, and enjoy!

Notes

  • Choose fresh noodles. Fresh egg noodles are the best for texture and flavor.
  • Prep ingredients in advance. Mise en place is crucial for a foolproof and seamless cook. Have all of your ingredients measured and next to you before you turn on the stove.
  • Use a hot wok. Make sure the wok is hot before you add oil and begin cooking. High heat adds a sear and smoky flavor to create the delicious pan fried noodles flavor.
  • If adding protein: if you’d like to add protein cook them first and remove them from the wok before cooking the noodles. Then toss the protein back in at the end to mix.
  • Taste to adjust: this is your stir fried noodles recipe, taste and adjust the seasoning with extra soy sauce, sugar, or seasonings if needed.
