Crab Fried Rice (Khao Pad Pu)

Crab fried rice is the most popular Thai dish for a reason, its incredibly delicious. Made with large sweet chunks of crab, scrambled eggs, and jasmine rice, you really can’t go wrong with this easy Thai recipe.

Ingredients

  • 3 cups jasmine rice day old and cold
  • 4 cloves garlic minced
  • 3 stalks green onions white and green parts divided
  • 3 large eggs beaten
  • 1 ½ cup lump crab meat
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce Golden mountain sauce preferred
  • ¼ teaspoon sugar
  • ¼ teaspoon white pepper

Serve

  • Prik Nam Pla
  • 1 cucumber sliced
  • 1 lime wedge cut
  • 1 bunch cilantro as garnish

Instructions

  • Saute aromatics. In a wok, heat 1 tablespoon of oil over medium-high heat until hot. Then add the garlic and white parts of the green onion and sauté until fragrant, about 1 minute. Then push everything to the side of the wok.
  • Scramble the eggs. In a small mixing bowl, whisk the eggs. Then pour into the wok and scramble the eggs until just set.
  • Add rice and crab meat. Next, add the cold rice on top of the eggs, toss to combine, and break up the rice clumps. Add the crab and toss until combined, about 30 seconds.
  • Add seasonings. Lastly, add the fish sauce, soy sauce, sugar, and white pepper. Toss until combined for about 2 minutes. Spread the rice in an even layer across the wok and leave it untouched for 20 seconds to toast the rice.
  • Add green onions and serve. Toss in the green parts of the green onions, and serve with a side of prik nam pla, cucumber slices, cilantro, and a lime wedge, and enjoy!
