Make teriyaki sauce. Heat a medium skillet over medium heat, add 1 tablespoon of vegetable oil, ginger, and garlic. Saute for 30 seconds until fragrant. Then add the soy sauce, mirin, sake, and brown sugar. Lower the temperature to medium-low and simmer for 5 minutes.
Thicken the teriyaki sauce. In a small bowl, mix cornstarch with water until dissolved. Then add the cornstarch slurry and mix until the sauce has thickened. Turn off the heat, add the sesame oil, and mix until combined. Remove from heat and chill in the freezer for 10 minutes or until it reaches room temperature. Reserve about 1/4 cup of teriyaki sauce for later.
Marinate the salmon. In a container, add the salmon and the remaining teriyaki sauce. Marinate for at least 30 minutes or up to 3 hours in the refrigerator.
Air Fry. Preheat the air fryer to 400°F (204°C) and line the inside of the basket with parchment paper. Place the salmon into the air fryer basket skin side down and brush a layer of marinade on top. Air fry for 7-9 minutes depending on the thickness or until the internal temperature reaches 145°F (63°C) at the thickest part of the salmon.
Serve. Brush the salmon with the reserved teriyaki sauce, garnish with green onions and sesame seeds and enjoy!
