How to make Vietnamese Lemongrass Chicken

This Vietnamese chicken is juicy, fragrant, and absolutely ideal for a weekday meal. The easy marinade is ready in under 30 minutes!

The star ingredient for this dish is fresh lemongrass!  This and the other spices are easy to find at Asian grocery stores and most large chain grocery stores too.

Prep the Lemongrass

Crush then mince the lemongrass stalks to release their fragrant oil.

Marinate the Chicken

In a large mixing bowl, mix together the lemongrass and other seasonings. Add chicken, and coat thoroughly. Marinate for a minimum of 2 hours or overnight for best flavor.

Cook the Chicken

Cook the chicken thighs on medium heat until golden brown before flipping. About 3-4 minutes per side.
