Matcha Strawberries

Treat yourself to these incredibly luxurious matcha strawberries. These fresh juicy strawberries covered with creamy and earthy matcha white chocolate are so easy to make and even more satisfying to savor.

Ingredients

  • 1 lb strawberries washed and dried
  • 1 ½ cup (10 oz) white chocolate chips
  • ¼ cup (60 g) heavy cream
  • ¼ teaspoon salt
  • 2 ½ teaspoon matcha powder sifted

Instructions

  • Prepare the strawberries. Wash the strawberries and lay them out to dry completely. Make sure they reach room temperature before dipping.
  • Melt the chocolate. In a heatproof bowl set over a saucepan of simmering water (don’t let the water touch the bowl), on medium-medium high heat, melt the chocolate, heavy cream and salt. Stir with a rubber spatula continuously until melted and silky smooth.
  • Sift in matcha powder. Turn off the heat and sift in the matcha powder. Stir with the rubber spatula until evenly incorporated. Set aside.
  • Dip the strawberries. Hold each strawberry by the stem and gently dip and roll the strawberry into the matcha chocolate to coat and let the excess chocolate drip into the bowl. If the stem has fallen off, use a toothpick inserted in the center of where the should be and dip the strawberry. Place on a parchment lined baking sheet. If decorating, sprinkle on the sprinkles at this time. Re-heat the chocolate mixture in the microwave in 10 second increments if it begins to harden.
  • Cool. Allow the berries to cool completely before enjoying.

Notes

  • Use fresh strawberries. Chose strawberries that are red, ripe but are still firm. Make sure the strawberries are clean, dry, and at room temperature for best results.
  • Use high-quality melting chocolate chips. I usually opt for Ghiradelli premium white chocolate baking melting chips or Callebaut white chocolate melting chips.
  • Sift the matcha powder. Make sure to sift the matcha powder into the chocolate. Sifting the matcha powder will prevent any large clumps from happening and allow for more silky smooth and even mixing.
  • Use a double boiler to prevent the chocolate from overcooking. You want to melt the chocolate but not burn it. Chocolate can be a very finicky beast if you overcook it, the texture may become clumpy and hard to work with. Use a double boiler and work with medium heat until the chocolate melts.
  • Chill before serving. Once dipped, the matcha chocolate-covered strawberries will need time in the refrigerator for the chocolate to set completely before serving.
  • Storage Instructions. You can store these matcha strawberries in the refrigerator for up to 3 days. Unfortunately, they will sweat a little bit the longer they stay in the refrigerator.
